Eating healthy sounds and look so difficult. Just look up healthy breakfast on Pinterest and you´ll be bombarded with aesthetic pictures of perfect, fresh looking bowls and fruits and smoothies. Green, orange, pink. The more colorful, the better. (I actually apply this rule, as long as the color is natural and not artificial). My point is that all those pictures look like they took a lot of work, which they probably did to create this sense of perfectionism and health-food superiority that is so widely spread. In realtiy, it´s not that hard to live a healthy lifestyle. Eating healthy, fresh food is good for your body. It gives you the energy you need, keep you concentrated, and happy. Imagine all the vitamins you´re missing out on while just eating plain toast or cereal for breakfast! All the juicy fresh fruit you could be taking in.It´s not hard, and it doesn´t take a lot of time to make, I just like taking my time and taking the time to prepare, eat, and appreciate my breakfast every morning. What you take in is what you will give out, energy wise.
MONDAY – Avocado toast
Started off the week with the most basic breakfast option there is: avocado toast (or, in my case, whole-grain bread). It´s no news that avocado is a super food, as it contains potassium, fiber, and those good-good unsaturated fats. I seasoned the avocado with lemon, salt, and chilli and added raw cabbage salad to my plate which my mother made. Cabbage is packed with nutrients: vitamins and protein, and is rich in fiber and antioxidants which protect the body from cell-damage. I also for some reason ate and an entire raw mushroom, which I later found out adds to fiber and protein intake.
- 1/2 avocado
- 1 mushroom
- Red cabbage salad
- lemon, salt, chilli for seasoning
TUESDAY – Grapefruit & Avocado
Because being resourceful is important, I at the second half of the avocado from the day before. Seasoned with lemon, salt, and chilli once more, I simply spooned it out without adding bread or anything like that. Then I had a grapefruit, which is my favorite breakfast right now! Grapefruits are not only incredibly tasty, but also amazing for you. They include many nutrients (Vitamin C galore!), antioxidants, and fiber. Apparently it strongly helps with weight loss and decreases the risk of heart disease, too!
WEDNESDAY – Oatmeal
2-Minute microwave oatmeal made with soy milk (soy milk with oatmeal actually tastes better than using cow milk fyi), topped off with blueberries and almonds. Almonds reduce hunger, promote weight loss, and are basically the best nut ever: the health benefits include lowering blood sugar and cholesterol levels, and they are packed with fiber, protein, magnesium, and vitamin E. Blueberries are tiny blue energy bombs. The combination of the two with oatmeal, which acts as a further source of fiber and healthy carbohydrates, makes for the perfect breakfast.

THURSDAY – Feta & fruit salad
This was my favorite breakfast of the entire week. Feta cheese, blueberries, and grapefruit. Summer in a bowl. And that at 7 a.m.

- Lemon, fresh juice from the grapefruit, and cinnamon for seasoning
FRIDAY – Avocado wrap
More avocado haha! This was such a spur of the moment breakfast and I´m lowkey so proud of this wrap me and my brother “created” in the span of five minutes while rushing to finish ans be on time for school. I even took one to school with me and it was still good, so this is perfect for taking to work or school aswell.
- Avocado (guac to spread on the wrap)
- cucumbers – I recommend peeling them but I was lazy lol
- Lemon juice, chilli, and salt for seasoning
- Goat cheese (feta cheese would work too)
- If you do choose to use goat cheese, adding walnuts and honey on top is the best decision you could ever make
